Puff puff is one of the favourite snacks for Nigerians and popular street food. It is not only eaten as a snack alone, but you can also eat it any time of the day. INGREDIENTS 600g all-purpose flour 10g fast action yeast 150g sugar (use as desired) ½ tsp salt 550-650g Lukewarm Water  cayenne pepper) 1-3tbsp chilli flakes (substitute with cayenne pepper) Vegetable oil for frying. In a shallow bowl, add flour and salt together (combine salt with flour first) Add other dry ingredients and combine well Add lukewarm water to the dry mixture in bits to form a batter. You can add 500g at first then check if it needs more water. (the batter should not be runny and it shouldn't be thick as well, find a balance in between the two) Cover the bowl with a cling film or a damp towel and place in a warm place to proof. Zobo drink also known as Sorrel drink or hibiscus drink is easy to make and it's refreshing. This zobo drink recipe is quick and requires just few ingredients. INGREDIENTS FOR ZOBO DRINK Zobo leaves -Hibiscus leave also known as Sorrel leaves Fresh whole pineapple or 1 litre 100% percent Pineapple juice 1 Orange (cut up) Ginger  (grated) Sugar (optional) Cucumber and orange to garnish (Optional) HOW TO MAKE ZOBO DRINK (SORREL DRINK) 1) Wash zobo leaves with warm water 2) Add the  zobo leaves in a pot and pour in 2.5 litres of water. 3) Add in the grated ginger, orange cut up and pineapple cut up Here I used orange cut up and pineapple juice from concentrate 4) Cover pot and leave to boil for 30 minutes 5) Add sugar, give it a good stir and  leave to cool. 6) Sieve through a fine mesh and chill in the fridge. 7) Serve and garnish with orange and cucumber.

Ofe Nsala (Nsala Soup) Ingredients 1 big Catfish 8 small pieces white yam 5 Utazi leaves 2 small seasoning cubes Small piece of ogiri okpei A handful crayfish Habanero pepper (to taste) Salt (if necessary) Before you prepare Ofe Nsala (Nsala Soup) Usually when you buy catfish in Nigerian markets, the sellers will kill and cut it up for you. When you get home, boil hot water and pour on the pieces of fish to remove the slime on the fish as well as toughen them. You want to toughen the catfish so it does not disintegrate in the soup.
